Flavours of Central India Cookery Course

The state of Maharashtra extends from the bustling coastal capital of Mumbai to the very centre of modern India. It’s home to numerous dishes and snacks that are enjoyed throughout India but are less known in Britain outside family homes.

The centre piece will be a regional mutton curry such as Kolhapuri Rassa or Nagpur Saoji. To accompany, vegetable sides either stuffed or cooked in the central Indian style and breads.

Underpinning it all will be an exploration of the more intriguing spices, pastes and techniques used by Indian home cooks.
