The Indian store cupboard contains many interesting ingredients that allow home cooks to add depth, tang and richness to their dishes. We’ll reveal how to use them to create dishes less commonly found outside the family home.
The centre piece of this course is a mutton ‘rassa’, a typical hot Maharashtrian curry, and to go with it 3 vegetable sides using typical Indian vegetables, either stuffed or cooked in the central Indian style. Underpinning it all will be a look at the more intriguing spices and pastes used by home cooks
Together with making bread and pickle, there’ll be many useful skills and tips to enhance the joy of Indian cooking!
